Orange Ginger Muffins

My go to for easy cakes and muffins is always the same: Yogurt cake!

It packs more protein and is healthier, and I love the soft texture.


With all the colds and lack of vitamin C lately, I’ve been drinking lots of orange juice, and making ginger tea, so I thought it would be fun to bring those two together into a muffin!


Orange Ginger Muffins:

1/2 c Yogurt

1/2 c Sugar

3 x Eggs

1 1/2 c Flour

2 tsp Baking Powder

Zest of 1 Orange

1 inch Grated fresh ginger

1/2 c Oil


In a large mixing bowl, combine yogurt, sugar and eggs. Add the dry ingredients and the orange zest and ginger. Fold to combine. Gently fold in the oil being careful not to over-mix. Fill in lined muffin tins, and bake at 350/180 for 25 minutes or until a cake tester comes out clean.
