Pickles: Okra and Cucumber

Fall is already here, but it’s hard to believe it.

Outside in the garden the herbs are still growing strong, and the bugs are still bitting.

Finally harvested the okra and cucumber from the garden, and decided to do a quick pickle with them.

Quick Pickle Brine

Ingredients
  

  • 4 c white vinegar
  • 1 c sugar
  • 2 tbsp salt
  • 2 c water

Instructions
 

  • Bring brine to a boil and pour over the ingredients in a sterilized mason jar.
  • Water bathe the can if you are preserving for longer, or otherwise store in the fridge.
