Peanut Butter Sauce:
-1/4 tbs peanut butter
-2 tbs fish sauce
-1/4 cup ginger sesame salad dressing
-3 tbs crushed peanuts
-1 clove garlic minced
-2 tbs sesame/sunflower oil
Prepare the chicken by cutting into small pieces.
Stir half of the peanut sauce in with the chicken pieces and let marinate for 1 hour.
Prepare toppings and lettuce leaves. Dice carrots, and set aside cilantro and the crisped noodles.
In a frying pan on medium heat, brown 2 cloves of garlic, and add the marinated chicken. Cook until the chicken is well done, and the peanut marinate has browned and reduced.
Serve the chicken with the leftover peanut sauce, toppings and lettuce leaves.
