Pumpkin Bacon Quiche (Savory Pumpkin pie!)

Now’s the time for all things pumpkin, and I’m so excited to share with you this recipe for a savory way to use pumpkin: A pumpkin Quiche!

All the things you love about pumpkin pie, the creaminess, the texture, the strong pumpkin flavor.. but this time paired with bacon, eggs, and some cheese and leeks to make the perfect easy lunch or dinner. It’s even delicious cold as a slice in your lunch box.

Pumpkin Bacon Quiche

-1 leek, sliced thin
-1 pack chopped bacon 🥓
-1/4 c cheese, cubed
-1 c roast pumpkin, mashed
-1 tsp chili paste
-1 tsp soy sauce
-4 eggs
-1 c milk
-1 c cream
-Pie crust

In a cast iron pan, fry the bacon along with the leek. Set aside.

In a large mixing bowl, whisk together the eggs with the milk and cream. Add the mashed pumpkin, along with the soy sauce and chili paste. Add in the cooked leek, cheese and bacon, and mix to combine.

In a high pie plate, line the crust then add the filling. Bake for 40-45 minutes at 190/375 degrees.

Enjoy warm or cold, with a crisp green salad and a glass of cider.
