Cooking: Oatmeal Lace Cookies+ Making Parfaits

I woke up so excited to see on my clock that it was only 10:30.

I wandered down the stairs, where I reaslized everyone was already awake… because it was 11:30, and not 10.

We thought it would be the perfect saturday for a lazy brunch, so mom and I headed to the store to pick up some nice bread.

I baked my favorite cookies to turn into granola pieces: these Oatmeal lace cookies!

and we made parfaits, soft boiled eggs and soldiers (bread slices).

Oatmeal Lace Cookies:

1/2 cup flour

Teaspoon Baking Powder

1/4 Cup melted butter

1 1/2 cups Rolled oats

One egg

1/2 cup sugar

 

Combine and drop spoonfuls onto lined cookie sheets, bake for 15-20 minutes or until golden brown.

Eat within two days or then will turn soft. If you would like to do like I love to do, crumble some of the cookies and use them to top your parfait as you would granola.

 

Assembling the Parfaits:

1 cup yogurt

1/3 cup chopped strawberries (marinate the strawberries by cutting them ahead of time and adding a little sugar, this will create a sweet syrup which is delicious).

2 Oatmeal Lace Cookies crumbled on top!

Serve right away!
