Cooking: Grilled French Toast

Some mornings are sweet and relaxing, waking up and having time to do many things before lunch. But in all honesty, my summer waking up routine involves getting up about an hour before lunch and finding myself choosing between breakfast and lunch.

This wasn’t one of those mornings, up by 9:30 I still had plenty of time. This grilled French toast was a wonderful way to use my well loved panini pan. Vanilla and cinnamon smells filled the air as the toast revealed its beautiful golden marks.

My mom joined me and we enjoyed every last bite of it. Really simple, really tasty. That’s all breakfast needs to be some days.

Grilled French toast:
-4 pieces of bread (I used whole oat-nut loaf)
-2 eggs
-1/4 cup milk
-teaspoon vanilla extract
-teaspoon cinnamon

In a bowl, mix the ingredients and lightly whisk them. Dip slices in the mixture and add to the panini pan, or grill pan. Bake for 4 minutes on each side on medium high heat. Serve with whipped cream or fresh berries.
